Bona Foods is renowned
across Canada for its traditional Capocollo. A
significant amount of time and labour goes into
each piece of this traditional Italian-style ham.
First, a federally approved pork ‘butt’
must be trimmed to yield only the leanest portion.
This lean section of pork is then carefully spiced,
hand-stuffed into a casing, and oven-baked for
about 8 hours.
Bona distinguishes its capocolli by utilizing
only a solid whole portion of pork per chub rather
than combining many small pieces. Producing capocollo
in this fashion is significantly more expensive
and time consuming – but it produces an
unquestionably superior product.
Bona Capocollo is available in whole or half pieces.
